Pork & Green Chile

1 lb pork
4-8 green chiles, roasted/chopped
2 cloves garlic, minced
1 onion, medium, chopped
1 tomatillo, large, chopped (substitute 1 medium tomato if tomatillos are not available)
2 cup water (boiling)
oil for browning meat
1/4 cup flour

Cut pork into small cubes. Sauté in oil until well browned. Drain off all but 1 tablespoon fat.
Add flour and sauté 3 minutes longer. Add chopped chiles, garlic, onion, tomatillo
(tomato) and water, season to taste with salt and pepper. Cover and simmer 1 hour.

Note: The green chile in this recipe will be somewhat green in color.

Serves 4
