she makes bosk cheese for Master........she glistens as she prepares cheese she skims off the cream from the milk vat in the milk shed, pouring it into the butter churn and then pumping the handle up and down, this moves the paddle inside the churn and eventually makeing butter, she feels the mixture become thick and it will be harder to move the handle, eventually she feels a ball of butter inside the churn -- take the butter and press it into a mold and put it in the cooler, pour off the whey (buttermilk) and checking to see if there is some in the servery, when she sees the supply is sufficient, feeds the whey to the pet sleens -- for the cheese, moves some of the milk from the vat to the cheese vat, light the fire, adding the starter and cook until curds form, she adds rennet and any flavorings she thinks Master would desire, cooks until its the right consistency, then drain and wrap the cheese in cheesecloth and sets it in the cooler to age. |
