Neverwhere by Neil Gaiman because it's probably the best standalone novel I've read so far. It's different from your standard fantasy fare as well.

Any books by Patricia C. Wrede. They are VERY quick reads, but the characters and situations are entertaining and very, very good.

I read Redwall by Brian Jacques not too long ago, and thoroughly enjoyed it. I would recommend it to any fans of the fantasy genre. The characters are loveable, and the conflicts are intense. Very enjoyable book.
