Here's how I did it. The miserable bastered caught me completely off guard too. Wearing a mix of light armor, didn't even have my sword out. I was carrying about 30 restore health potions at the time (self made, and all exactly the same). My character was at about level 65 or so with all stats except luck nearly 100. Plus his un-armored and all other armor ratings are at 100.
I always quick key restore health potions to number 1, and program my controller so I have a #1 button within easy reach. I must have burned 10 restore healths before I got him.
